I don't think the purpose of egg substitute is to solve hunger problem, but to improve our treatment of animals. Egg laying chicken are usually locked in extremely confined space all their life, and it's one of the extreme cruelty not many people are aware off. I think the bill gates foundation has funded some projects to find egg substitute.
